Here is one of our first and favorite recipes for a raw dried fruit snack that is very simply to prepare, and great any time of day! Plus they stay forever in your fridge. And pack wonderfully in the kid lunchbox. My daughter loves them!
Apricot Cranberry Nubblers by Green Plate KitchenYields: 24 Triangles
⅓ lb Dried Apricots
⅓ lb Dried Cranberries
¼ cup Shredded Coconut
2 Dried Dates (no seeds!)
⅔ cup Old Fashioned Oats (can use Gluten Free Oats to make GF)
Puree ingredients in food processor. Press into pan sprayed with non-stick spray, then cut into 12 squares, then diagonally into triangles.
Serve and enjoy! They stay great in the fridge for at least a month! Perfect snack or special treat for any time of day.
